T-Rex Cookie has been in business for over 10 years, opening in January of 2015 and now having a location at the MSP Airport as well as at 525 Diffley Road, Suite 2080, in Eagan.
The name is inspired by the owner, Tina Rexing, who has a history in competitive baking and opened the first T-Rex Cookie location in St. Paul in 2017. Since then, the brand has received national recognition, including being featured during Super Bowl 52 in the Twin Cities.
Rexing was featured on Shark Tank in 2020 and has since grown her brand to frozen cookies in more than 1,000 retail locations around the country.
