By now, you know I'm the first guy to admit I don't know everything and I haven't heard of everything, so this was a new one for me.

SDSU Extension will hold workshops in February and March on processing maple syrup in South Dakota.

Yup, you read it right.

Organizers say the workshops are for anyone who has a few sugar or silver maple trees, or even boxelder trees, and would like to learn more about maple syrup processing.

I won't go into all the details, but this did get my attention.; We had no maples on our McCook County farm where I grew up, but we did have boxelder trees--lots of them, so this would have interested me back in the day.

Turns out an expert at SDSU is going to be tapping maple trees at the McCrory Gardens Arboretum in Brookings.

The workshops are February 24 in Aberdeen, March 3 in Brookings and March 6 in Sioux Falls.
